Sur La Table: Things Cooks Love

By JULIETTE ROSSANT

Things Cooks Love, by Sur la Table Marie Simmons' Things Cooks Love: Implements, Ingredients, Recipes (Andrews McMeel 2008) is a very useful book for those outfitting a new kitchen or starting to cook a new cuisine. It is also includes a glossary or dictionary with a description of practically every kind of tool, pot, or appliance you might find mentioned elsewhere.

The first section describes essential cookware and tools and the second section covers how to use various cookware pieces. Marie provides recipes for each piece of equipment. For instance, she describes the use and care of a Dutch Oven (p. 59) and then offers two recipes that require a Dutch Oven, Oven-Braised Short Ribs with Fennel (pp. 61-2) and Oven-Baked Cannelini Beans (p. 61).

In the final section of the book, Marie details the tools needed (and no doubt sourced at Sur La Table) to cook the food of different cuisines: The Asian Kitchen (p. 143), The Mexican Kitchen (p. 171) and so on. The Indian Kitchen covers the panty (ingredients) and pots like the Karahi on page 243, a small wok-like pot used to prepare recipes like Coconut and Curry Lamb Stew with Green Beans and Potatoes. There is also the Spice Grinder (p. 247) and a recipe for Garam Masala (p. 248).

Sur la Table

Things Cooks Love and Sur La Table's other books would make a great wedding or holiday gifts – along with new knives, pots, pans, and tools, of course.
