Rick Moonen, who has been an advocate of sustainable seafood for years, has written Superchefblog about a Seafood Watch training class he is holding on December 4 (Monday) at RM Seafood at Mandalay Bay Resort & Casino. He wants to help his staff make the right choices about sustainable seafood. ![]() The class is based on a free 2-hour DVD distributed by the Monterey Bay Aquarium. This is an easy, smart program that can be run by any restaurant. The more consumers demand and get sustainable seafood, the better. The Aquarium has handy pocket guides to help consumers ask the right questions when they dine out – and more than 60% of seafood is eaten in restaurants.
